Couscous salad: Morocco meets Mexico

BBQ season is upon us and what do we like more with a juicy steak or grilled vegetables? Salad...that is savoury and filling.

I am a massive fan of couscous and eat it as the carby basis for a saucy dish,
as an accompaniment for a rich casserole or tagine, or of course cold for lunch or in salad.
With some lovely spices and fresh vegetables, this turns into a salad that will impress even the most reluctant lettuce eaters and their loathing into love.

Serves 2-4; ready in 15min

Quick and Easy home-made Bruschetta with whole grain toast




















People tend to think that, apart from Pizza - which was hijacked by the Americans improving thickness and cheese-content - and Spaghetti - which has become a kind of universal easy-to-make dish - the Italians are the Masters of their own cuisine! 
They give it unpronounceable names and have the authentic advantage of actually sun-blushing/kissing/drying their food and have the climate to sweat out the litres of olive oil used in all their foods. But I will show today how you can make your own delicious BRUSCHETTA!

Bruschetta, for the Italians is the toasted bread by the way, which can be topped with anything really. However in other European countries it's the typical tomato and garlic mix on top that has become associated with the name. Therefore I will add the simple recipe for the mix, as opposed to the recipe for whole grain toast. That may come some other day :) Enjoy!

Spicy filled Tomatoes (Ham, Tuna or Vegetarian) with Halloumi



Tomato soup, tomato sauce - with or without meat -, tomato salad ...isn't it getting a little boring?
Why not try filling the tomatoes instead?! It's a great way to use up left-overs, give the tomatoes a nice seasoning (literally from the inside-out) and to try something new. Rediscover the taste of tomatoes, the mediterranean way, the spicy way, or any way you choose...
