Spinach and Goat's Cheese with caramelized Red Onions

Check out our fast, cheap and easy way of preparing spinach!












Ingredients:

  • 1 kg Baby Spinach Leaves
  • 2 Red Onions
  • 1 roll (100g) of rich and crumbly Goat's cheese
  • Rock Salt and Pepper
  • Sugar
  • Olive Oil

Preparation:

Wash the baby spinach leaves and dry. Chop up the Red Onions. Put on Olive Oil on the highest heat in a large pan and add the red onions. Immediately add 3/4 tbs of sugar and constantly move the onions around to caramelize but make sure not to burn them. When they take on a glaze and golden brown colour, add the spinach and turn the heat down to medium.
Use a spatula to lift the spinach under the onions and mix them with the sugary dressing. Once they start to look a little wilted take the mix out and place on a plate or in a dish. Grind rock salt and black pepper over the mix and then - with clean(!) hands - break bits and pieces of the goat's cheese onto the caramelized spinach mix, spreading it out.

Depending on your taste you can either then grill the mix some further or just add more oil or croutons. A nice idea are also seeds, walnuts or little crackers. Perfect for a healthy lunch, a quick vegetarian side dish or an interesting warm salad alternative! Buon Appetito!
