Serves: 6-8
Prep: 1.5 - 2hrs
Cook: 40 - 50mins

Ingredients:
  • 1 loaf of white bread/toast. Any quality/brand work (to make the best pudding the bread should be stale but fresh bread works as well)
  • approx. 250 g of Butter
  • Mixed dried fruit
  • Granulated sugar
  • 1 pint of milk
  • 2 eggs

Preparation:

First butter one side of each slice of bread. Traditionally the bread should be stale, if it isn't it can be very lightly toasted till it's slightly crisp.

Next you cut off the crusts and cut the slices diagonally into triangles. ! Best advice is to scissors or a very sharp knife!
Afterwards you grease a baking dish and put down one layer of bread with the butter-side down! You can either lie them out flat or overlapping each slice, depending on the thickness of slices and the amount of bread you want to use.

Sprinkle the layer with sugar and dried fruit.  Depending on your taste any dried fruit will work nicely or you could drizzle honey/golden syrup over the bread if you have a particularly sweet tooth! Important is then to use less sugar later!!

You now layer the remaining bread on top of one another with the butter-side up and sprinkle with sugar and fruit again.
Create a mix, by beating together the milk and eggs and then pour the mix over the bread. This needs to soak for approx. 1 hour! This will make the bread very soft when baked. Top up with a little bit more milk if desired.

Preheated your oven on 180˚C (160˚C with fan or Gas mark 4) for 40-50 minutes while the bread soakes up the mix and then bake until the bread on top is golden brown and crisp!

When it's done serve it with cream or ice cream. And voilà!!! Your guests will be blown away by this sweet and rich dish!

The Pudding can afterwards be kept for 3 days in the fridge and be heated up in the microwave.
