Quick and Easy home-made Bruschetta with whole grain toast




















People tend to think that, apart from Pizza - which was hijacked by the Americans improving thickness and cheese-content - and Spaghetti - which has become a kind of universal easy-to-make dish - the Italians are the Masters of their own cuisine! 
They give it unpronounceable names and have the authentic advantage of actually sun-blushing/kissing/drying their food and have the climate to sweat out the litres of olive oil used in all their foods. But I will show today how you can make your own delicious BRUSCHETTA!

Bruschetta, for the Italians is the toasted bread by the way, which can be topped with anything really. However in other European countries it's the typical tomato and garlic mix on top that has become associated with the name. Therefore I will add the simple recipe for the mix, as opposed to the recipe for whole grain toast. That may come some other day :) Enjoy!


Ingredients:
  • 3 or 4 ripe Tomatoes
  • 1 red Onion (Spring Onions are also a lovely alternative and give it some colour!)
  • 1-2 cloves of Garlic
  • Olive Oil
  • Lemon Juice
  • Rock Salt
  • (Coarse) Ground Black Pepper
  • 1 Tbs of Sugar
  • White Wine Vinegar (although any should do, apart from Balsamic)
  • Optional: Basil leaves

Preparation:

This is probably the easiest recipe EVER!

You literally just chop up the tomatoes, dice the Tomato and Garlic. Put into a bowl and add the spices (and chopped Basil leaves, if you like). 

Then add olive oil - it should cover about half of the mix. Then add about one third of the amount of olive oil in vinegar. Add a few drops of Lemon juice and the sugar.
To mix it all, and extract some of the juice from the tomatoes to improve consistency, use a fork to mix and squash the ingredients.
Done!

More and more in the UK, supermarkets and bakeries offer whole grain bread. If you can get some bread buns or a loaf, just cut a few small slices and toast/grill them.
Spoon the mix on top, carefully pouring the liquid over the toast.

Give it a couple of minutes to soak up the juices and oil and then it's ready to serve! This is either a delicious Entrée, a light snack in Spring or a healthy addition to a full breakfast/brunch!
